1 cup cooked quinoa
1 cup quick oats
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon vanilla
3 tablespoons brown sugar
1 tablespoon granulated sugar
1 tablespoon maple syrup
1 cup chopped apples
2 eggs, lightly beaten
Add all ingredients in a bowl and mix until combined. Spray a mini muffin pan with cooking spray. Bake in a 350 degree oven for 15-20 minutes.
I plan on breaking a few of these up and putting them in my yogurt. Oh my!!
